Cape Gooseberry Relish

Prepare equal quantities of fruit, onion and sultanas (optional) by removing blemished fruit and chopping each ingredient finely. Cook in a saucepan with the addition of only a small amount of vinegar to get the mix boiling. When all the ingredients have softened add 1/3 of the weight of the fruit in sugar and stir until dissolved. Add salt and vinegar to taste. Simmer until thick and syrupy. Add a few linseed seeds to the relish just prior to bottling in sterile jars.
