Filled Cos Lettuce Hearts

4 Heads of Cos lettuce
1 cup of fresh Bread crumbs
Olive oil

1 clove of garlic (chopped)
½ cup of sultanas
¼ cup of Almonds
½ cup of Ricotta
½ cup of cooked silver beet
Leaves from 2 sprigs of Mint
Lemon juice
Sweet Soy Sauce

Remove the tough outer leaves and wash the lettuce hearts, blanch in salted boiling water. Drain.
Mix together the filling ingredients using the lemon juice and sweet soy sauce to bind it together.
Lay the lettuce hearts on a greased tray, fold back the outer lettuce leaves and fill with a handful of filling. Fold the lettuce leaves over the filling and drizzle with olive oil. Sprinkle with bread crumbs and bake for 20 – 30 minutes.
