Fruit Mince

120gms softened Butter
120gms Brown sugar
350gms mixed dried fruit (eg.sultanas, currants, raisins)
60gms Almonds (optional)
2 Granny Smith Apples (quartered and grated)
1tspn mixed spice
½ tspn grated ginger
Rind of one lemon
½ cup of brandy

Mix all the ingredients together. Process in small batches until the texture of the mix resembles ‘mince’. Spoon into sterile jars and store for several months before using in fruit mince pies, garibaldi slice, Christmas puddings or in lots of other yummy Christmas-cooking-style ways.
