Potato Acid Yeast

1 Medium Potato
1 1/2 tablespoons of sugar
2 teaspoons of flour
1/2 teaspoon of citric acid
1 cup of warm water

Boil and mash the potato, add remaining ingredients and top up to one cup quantity. Place in a lidded jar and keep in a warm place for 24hours before use.
