Potato Gnocchi

1kg Potatoes
400gm of Plain Flour
2 tspn butter
Pinch of Salt
1 Egg (optional)

Peel and cube potatoes, steam until cooked, cool completely! Dust work area with a handful of flour. Press potato through a colander over the top of the sieved flour. Make a well in the potato and add the remaining ingredients. Knead until it comes together to make a smooth dough. Roll dough into sausages and cut crossways into pieces. Freeze or cook in salted boiling water immediately and serve with home-made pesto!
