Really Easy After Dinner Mints

Puree the leaves from two of sprigs of fresh mint in a food processor. (I find if you add a couple of spoonfuls of icing sugar the processor does a much better job).

Place the mint in a bowl and add an egg white and enough icing sugar to make a thick paste. Roll the fondant into balls and leave uncovered to set overnight.

Once set the balls can be dipped in chocolate, rolled in cocoa or eaten just as they are!
