Zucchini Cake

  • 3 Eggs
  • 220gm of Brown sugar
  • 170ml of Oil
  • 250gm of Zucchini
  • 80gm of Walnuts
  • 200gm of SR Flour
  • 1 tsp of Cinnamon

Place zucchini and walnuts in a food processor and pulse until you have a coarse mixture add the remaining ingredients and process gently until combined.

Spoon mixture into a greased, 24cm spring form tin and bake in a moderate oven for approx. an hour.

Sprinkle with extra cinnamon and sugar to serve. (The flavour and texture of this cake gets better after a day or two!)
